
Dragon Fruit / Pitaya Bird’s Nests
(Serve 1 person, preparation time 1.5 hours)
Ingredients
5
grams of dried bird's nest
5 small cubes rock sugar
1 dragon fruit / pitaya
300ml of drinking water
Preparation
method:
Soak the bird's nest in a bowl
of lukewarm clean water. Wait 1 hour. It will expand and soften.
Drain the water from the
bowl to remove the visible dirt and the remaining tiny feathers. Do this few
times until it is spotlessly clean.
Place bird’s nest in a
clean tureen and double-boil for 30 minutes with high fire then add rock
sugar.
Slice horizontally one
fifth of the dragon fruits then spoon out the meat and leave a cavity in the
dragon fruit.
Place the bird’s nest
into the cavity and top-up with the dragon fruit meat. Serve it cold.
Benefits: skin whitening effects and
increase bone density.
